My omelette

How blessed can one women be? I spoiled myself today by making a puffed omelette filled with pastrami and cheddar cheese on a slice of Ciabatta smeared with a Hollandaise sauce ...  and eating it while watching Medea's Witness Protection on Mnet. Thank you Lord for small mercies!

Folded omelette

Seperate two eggs.
Beat egg whites to stiff peak stage.
Beat egg yellows a bit.
Fold the yellows into the egg whites.

Place a nob of butter in a pan ... medium heat.
Put omelette mix in pan and place a lid on the pan.
When the omelet has puffed up (it is amazing to see this happen ... like a souffle) add salt, pepper and any meat pieces e.g. ham or pastrami, and great cheddar cheese over it.
Place lid on again until the cheese has melted.

Place on a slice of bread smeared with butter or cream cheese or Hollandaise sauce ....  and fold over.
Yummy !
